Einkorn is the Mother Grain, the first domesticated grain. Wild harvested 17,000 years ago, this ancestral wheat was almost lost in the name of progress, but is enjoying a renaissance as a supergrain with higher levels of protein, phosphorous, potassium, vitamin B6, beta-carotene, and essential fatty acids than modern wheat.
